Sneha's Simple Fried Veggie Gravy

A wholesome and flavourful dish made with love and Alburyani's whole spices.


Ingredients:

For the Gravy:

  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 2 green cardamom pods
  • 1 bay leaf
  • 1 small cinnamon stick
  • 2 cloves
  • 1 medium onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 teaspoon ginger-garlic paste
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • 1 cup coconut milk
  • Salt, to taste

For the Vegetables:

  • 1 cup mixed vegetables (carrot, beans, peas, and capsicum), chopped
  • 1 cup water
  • Fresh coriander leaves, chopped (for garnish)

Method:

 

  1. Heat Oil and Spices:

    • Heat oil or ghee in a pan. Add cumin seeds, cardamom pods, bay leaf, cinnamon stick, and cloves. Sauté for a few seconds until fragrant.
  2. Prepare the Base:

    • Add the chopped onions and cook until golden brown.
    • Stir in the ginger-garlic paste and sauté until the raw aroma disappears.
    • Add chopped tomatoes and cook until soft and mushy.
  3. Add Spices:

    • Mix in turmeric powder, red chili powder, coriander powder, and salt. Cook for 1-2 minutes.
  4. Cook the Vegetables:

    • Add the mixed vegetables and sauté for 2-3 minutes.
    • Pour in coconut milk and water, cover, and simmer until the vegetables are tender and the gravy thickens.
  5. Garnish and Serve:

    • Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
